Two Ingredient Pancakes

There is something attractive to the idea of making pancakes with only two simple ingredients.  Especially when you can arrange the ingredients into a smiley face.

The recipe is pretty straight forward.

Two Ingredient Pancakes

2 eggs

1 ripe banana

Get a skillet nice and hot.  In a bowl, whisk together eggs.  Then mash banana into egg until well mixed.  Grease skillet, and ladle in batter (2-3T per pancake).  Cook until golden, flip, and cook other side till golden. Serve immediately.

Honestly, it’s good but kind of plain tasting… so try these add in options:

1 pinch of baking powder

1 cup ground old fashioned oats

2 teaspoons vanilla

1/2 teaspoon cinnamon

1/4 cup apple sauce

The kids loved getting into the kitchen and helping me make this recipe.  It is super easy, and a good recipe for them to try doing by themselves.

I ate the pancakes with just a little jam on top, and the kids preferred honey on theirs.  I enjoyed this healthy recipe and will make it again.


Omega Egg Sandwich

When you have a plethora of eggs, the only reasonably thing to do is to make an egg sandwich.

First toast your english muffin and slather it with butter. 

Quickly top with sharp cheddar cheese so that the heat of the muffin can start to melt the yummy cheese.

Grab some ham slices and heat those up in a pan.

Next slice an onion into a 1/2 inch thick ring.  This will be perfect to fry an egg into it.


On top of the cheese, add your hot ham slices and your over-easy egg-in-an-onion.


Enjoy.  And then repeat.

Fall 2015 Kid Activities in Kansas City

Each season I create a to-do list of actives for the whole family to do together.  This helps us make the most of the “What should we do today?” moments, and gives us a reminder of all the fun things we’ve done.

Here is our Summer 2015 list:


Summer 2015 – I just love seeing the kids artwork scribbled all over the page.

After next week we will be able to cross-off some more items and move onto our next to-do list!

I’ve already compiled the list for Fall 2015 and thought you’d like to take a look at what we hope to do during this season!

When I’m compiling my to-do list I think of events that we are already planning to do (for the Summer 2015, I knew that my kids would be in a wedding so I added that to the list).

Then I add in new adventures for us to try (for the Summer 2015, I wanted to take my kids blueberry picking for the first time).

And lastly I will add family favorite activities (roasting s’mores usually gets added on every season’s to-do list).

I still want to add more to this list, but having a hard time thinking of what else to add.

Welcoming Baby Chicks!

We welcomed six baby chicks into our family earlier this week!

Three Ameraucanas (colored eggs!!) and three Black Australorps.

In our current coop, we already have Buff Orpingtons, Rhode Island Reds, and a Plymouth Rock so we were looking to add in a little more variety in our layers.  When we introduce our baby chicks to our current flock we will need to monitor the dynamics of the girls because of all the different personalities of each breed.

This precious fell asleep in my hand instantly.

We have completely fallen head over heals, and I think they have fallen for us too.

The kids LOVE playing and holding these little girls. I’m excited for them to learn more about how to care for the chicks.  It’ll be fun to incorporate this experience into homeschooling.  I am thinking about doing an art journal documenting the stages of chick development and enlisting the kids help with cleaning up the brooder.

We purchased our chicks from our local farm store (Feldman’s Farm and Home in Liberty).  They advertised on their Facebook page when they were going to start selling chicks, and we made sure to arrive early on that day.

Chick Essentials:

  • Brooder: This is the chicks first home.  We used a large storage tub and placed it in our kitchen.  Look for a location that has no drafts or dampness.  If you have animals at home (or kids who don’t know how to handle them properly) think about adding a simple screen over top.
  • Heat Bulb and Metal Lamp: Though some people use just a simple 100-watt bulb, I recommend spending the extra couple dollars to purchase a red 250-watt bulb.  These bulbs will produce heat, which is needed to keep the chicks warm, and the red light will disguise blood, which will protect the injured bird from being pecked at by the other birds.
  • Bedding: Pine Shavings are the best option for inside the brooder.  (Cedar shavings will cause respiratory problems for chicks).  Avoid using straw which is too difficult for chicks to walk on and newspaper which doesn’t provide enough traction for their developing feet.
  • Feeders and Founts: Baby chick sized feeders and founts can be purchased at the store or I have seen some people make their own.  Avoid just using bowls because they are easier for them to soil.
  • Chick Starter Feed: At each stage chickens need correct nutrition.  Starter Feed has a higher protein and lower calories compared to the feed layer hens need.
  • Grit: When the chicks start kicking around their bedding, introduce grit into their diet.  Grit helps aid in digestion.  It is composed of little pieces of sand or stone that they store in their gizzards

This is the chicks’ first home. We just added the roosting stick, but they probably won’t learn how to use it until next week.

I don’t have any photos of Zoey or Ethan with the chicks because Zoey is still a little scared to hold them and Ethan prefers to just throw objects into their home.  I’m sure with time they will get used to the little chicks.  But we already have developed a daily routine of saying good morning and good night to them.  However, we won’t admit how much time we spend sitting on the floor right next to their brooder,  watching them scurry around in their box.

Spinach and Egg Bake

Whenever my beautiful friend, Kaytlynn, comes over to visit I love to experiment with new dishes. It takes a special kind of friend to endure taste testing with me!We made a dish called Baked Spinach and Egg, and we loved it!  Actually, I loved it so much I made it again for my breakfast the next day!

I love finding new recipes that incorporate more vegetables with breakfast foods. I’m already a big fan of sautéed spinach with scrambled eggs, but I love this new twist.  For the recipe, visit Abby at Manila Spoon.

Money Tip:: Instead of purchasing Feta in the cheese aisle, head over to the salad bar.  Scoop out exactly how much Feta cheese you need into a to-go box.  When you shop at the salad bar, you can get exactly what you want and purchase it by weight.  I love getting bacon bits and chopped chicken for my salads, or a side dish that only I will like (asparagus! or broccoli salad!)
