The recipe is pretty straight forward.
Two Ingredient Pancakes
1 ripe banana
Get a skillet nice and hot. In a bowl, whisk together eggs. Then mash banana into egg until well mixed. Grease skillet, and ladle in batter (2-3T per pancake). Cook until golden, flip, and cook other side till golden. Serve immediately.
Honestly, it’s good but kind of plain tasting… so try these add in options:
1 pinch of baking powder
1 cup ground old fashioned oats
2 teaspoons vanilla
1/2 teaspoon cinnamon
1/4 cup apple sauce
The kids loved getting into the kitchen and helping me make this recipe. It is super easy, and a good recipe for them to try doing by themselves.
I ate the pancakes with just a little jam on top, and the kids preferred honey on theirs. I enjoyed this healthy recipe and will make it again.
